Thai Red Curry Paste



This is my Thai Red Curry Paste Recipe
This is really easy to make and can be stored for in the fridge to be used at a later date.

Equipment Needed
Petal and Mortar or Blender

Ingredients 

2 -3 Cloves of Garlic
1 Shallot
1 Stalk of Lemon Grass
25 dry Red Chillies
1 Thumb Size Peace of Galangal (You can use Ginger if you cant find Galangal)
2- 10 Thai Red Chillies (Depending on Heat)
4 -5 Kaffir Lime Leaves
1 Teaspoon of Salt
1 Teaspoon White Pepper
1 Teaspoon Shrimp Paste (optional)
Nice Handfull Of FreshCoriander


Method
  1. Soak the dried chillies in some hot water for around half and hour. 
  2. Remove the chillies from the water and add all the ingredients to the blender
  3. Blend until the paste is formed it will smell very strong at this point.
  4. The curry paste is now ready to be used.
